Cajun Baked Salmon

I made this last night - so simple but SO good!!
2 tsp olive oil
Juice from half a lime
Cajun spices - if you can't find a pre-made blend then use a mix of the following: Ground Garlic, Brown Sugar , Salt , Ground Ginger , Ground Cumin, Ground Allspice , Lemon Peel , Ground Black Pepper , Chilli Powder, Ground Cardamom and Thyme (I just took these off of the blend I used!)
Shredded savoy cabbage (1 cup)
Spring onions
Preheat your oven to 220c/428f
Mix olive oil, lime juice and spices together in a small bowl
Rub the mixture over the top of the salmon and set aside
Cut a large piece of baking parchment (big enough to create a bag or envelope for the salmon)
Finely chop the spring onions
Place the salmon onto the baking parchment, scatter with spring onions (and if you want some lime slices, depends how citrusy you want the fish to be)
Close the baking parchment over the salmon (it should look like a bag or envelope, roughly)
Place into the oven for around 15 minutes
Shred the savoy cabbage and place in a pan of boiling water
Cook as desired (some people like it with a bit of a bite, some prefer is softer so the timing is totally up to you)
Cook any other vegetables you're having with the fish
I used asparagus spears and strips of red, yellow and orange peppers
Place the cooked cabbage onto a plate and place the salmon on the top
Add the other vegetables and enjoy :happy:

mmm thanks for that...im always looking for new easy fish recipes to have for lunch since im the only one in the house that enjoys sea food0

Another one for you all, this time with cod loin:
1 4oz cod loin
1 small lemon
1tsp olive oil
Spring onions (leeks also work well here)
Ground black pepper
Ground chili flakes
Shredded kale or spring greens
Preheat your oven to 220c/428f

Rub the cod loin with the olive oil and grate black pepper and chili flakes over
Place the cod loin onto the baking parchment
Slice the lemon and finely slice the leek or spring onions
Scatter lemon slices and leek/spring onions over the top of the fish
Close the baking parchment (it should look like a bag or envelope, roughly)
Place into the oven for around 10-12 minutes (depending on thickness of fish)
Serve on top of shredded kale/spring greens, baby new potatoes and broccoli.0 -
