Healthy All in One Type dishes

The hardest thing for myself (and mostly my partner) is the planning of meals. Not only can that be time consuming when you're busy, but unless you make and add every single ingredient yourself, there is always room for error. For the type A person that I am, I pretty much count every ingredient and measure to the minute amount in order to get calorie counts perfect. At the risk of screwing up the counts, we usually keep it pretty boring and stick to a few things we know the counts of, but it would be nice to find other stuff and not get bored by food then rebel! LOL. It would be awesome to get some Healthy All in One type dishes (casserole-ish?) where we can make the meal, measure out the amount, and have leftovers. We're both meat eaters, so meat is a must! (meat = all of the typical species, LOL)
I was wondering if anyone can point me in the direction of some reliable sites containing GOOD TASTING AND HEALTHY meals that pretty much tell you how much of everything to add, what the size of a serving is, and the nutritional information for each serving. I know some of my friends have healthy recipes that may fall into taht category, and I'd appreciate that too. Would also love things healthy muffins, smoothies, etc.

I like to make a couple easy things
-Lasagna
-1 16oz container fat free ricotta
- 1 cup low fat mozzarella
-16oz marinara without cornsyrup
-1 or 2 eggplants
-1 zucchini
-1 onion
-1 lb spinach
-1 clove garlic
Step 1-prep then mince zucchini, onion, and spinach. Slice eggplant into thin circles.
Step 2-put garlic, spinach and onion in pan and cook until soft
Step3 assemble lasagna in a square pan- sauce, eggplant, ricotta, veggie mix, a bit of mozzarella, sauce repeat. Sprinkle top with cheese
Step 4-bake at 375 for about 40 mins.
Side note-feel free to add ground browned turkey or lean beef.
"Mexican"Crockpot Chicken
-4 boneless skinless chicken breasts
-1 small onion
-2 cups crushed tomatoes or 1 cup crushed tomato, 1 cup salsa
-1 can black beans
-1 can no salt added corn
Step 1-slice onion
Step 2- spray crockpot with pam, add chicken, onion, empty cans into crockpot.
Cook low for 4-6 hours or high 6-8 hours
Serve with 100 calorie tortillas.0 -
