Black Bean, Chickpea and Avocado Salad
Ingredients
1 1can (19 oz/540 mL) can (19 oz/540 mL)black beanblack beans, drained and rinsed
1 1can (19 oz/540 mL) can (19 oz/540 mL)chickpeachickpeas, drained and rinsed
2 2green oniongreen onions, sliced
2 2tomatotomatoes, chopped
1 1sweet yellow pepperyellow peppers or red pepper, chopped
1 1avocadoavocados, peeled, pitted and cubed
1/4 1/4cup cup(50 mL) (50 mL) chopped fresh coriander
1 1tsp tsp(5 mL) (5 mL) grated lime rind
1/4 1/4cup cup(50 mL) (50 mL) lime juice
1/4 1/4cup cup(50 mL) (50 mL) vegetable oil
1 1jalapeno pepperjalapeno peppers, seeded and minced
1 1clove garliccloves of garlic, minced
1/4 1/4tsp tsp(1 mL) (1 mL) salt
1/4 1/4tsp tsp(1 mL) (1 mL) pepper
Preparation:
In large bowl, toss together black beans, chickpeas, onions, tomatoes, yellow pepper, avocado and coriander. In small bowl, whisk together lime rind and juice, oil, jalapeno pepper, garlic, salt and pepper. Pour over bean mixture; toss to coat
