Wash the jars, put them in a low oven to dry and sterilise, then make your sauce. I saute some finely chopped onions and garlic in very little oil. Add my chopped up toms (all shapes and sizes, any kind), some herbs (oregano, italian seasoning, etc), maybe a pinch of sugar if it needs it, and salt and pepper, then cook slowly for 30 mins or so until it is all cooked and the consistency you like. Ladle into the hot jars, while the sauce is still hot, then seal the jars. Wait until they cool to label them.
Variations - sometimes I oven roast chunky veg (peppers, aubergine, courgette) and add those to the finished sauce before jarring. Sometimes roast a whole bulb of garlic and add that. Sometimes make an arribiata one with chilli.
