International food friday

Hello everyone,
We have a "food Friday" every week at work. We each bring a dish to pass. This week we are making international foods but I am having a difficult time coming up with something that is somewhat easily portable ( I have an hour drive and then we park in a community lot and take the university bus to the hospital). We also do not have a stove but we do have a skillet, toaster, microwave and a sink. Does anyone have any ideas they could pass this way?
