Blueberry Ideas?

Today I went and picked blueberries. MMMM so yummy 30 lbs worth. Most I am freezing for now but I could use some ideas on how to use them. Most of the time we use them for smoothies and icies and cobbler. But some other healthy ideas would be good.

    I just got the new Parents Magazine today and they had a whole article dedicated to blueberries! What a coincidence! Here's the link to the recipes...Yummmmmmmm....

    Edit: Okay, so they aren't the HEALTHIEST things out there, but I think they could be modified. The berry-yogurt pops look especially delicious.

    Sprinkle some of the frozen ones with Splenda and top with enough skim milk to just cover them. The milk gets all slushy and it's similar to frozen ice cream!

    Throw some into a spinach salad or even some chicken salad!!

    Blueberry Protein Waffles

    ½ cup quick cooking oats, ground

    ¼ cup fat free cottage cheese

    ½ cup egg whites

    1 packet of sweetener

    1 tsp baking soda

    2 tbsp ground flax seeds

    ¼ cup blueberries


    Combine all the ingredients together until just moistened. Spray a waffle iron with non-stick cooking spray and then pour batter on top and cook until just golden. Makes 2 waffles.

    I love just serving of blueberries late at night as my snack when I watch a good movie! YUM!

    Yogurt Parfaits, layer blueberries with yogurt and another fruit of your choice like strawberries or banana, then top with a sprinkle of grape nuts, my kids adore this :)

    Thanks for the ideas. I like the salad idea and the waffle recipe sounds great.

    Tommorow we are making sorbe but for now I think I am going to make some cobbler.:tongue:

    I love blueberry smoothies!

    I cup soy milk
    handful of ice
    1 cup blueberries
    3 equals
    dash of vanilla extract
    1 scoop of designer whey protein powder-vanilla (adds 100cals though...)

    So good and filling for breakfast! With the powder it equals about 270 calories
