Peach and Pineapple Cinnamon Muffins

Hey All You Wonderful Fitness Fanatics! So in my urge to bake, I have been experimenting with various recipes. Well today, I decided that I wanted muffins and so I threw together some ingredients out of my fridge and pantry and came up with this little number. They are actually quite delicious and only come in at about 137 calories per muffin.
I posted the recipe to SparkPeople as well and entered in all the nutritition specifics.
Here is the recipe:
Ingredients
1.75 c Whole Wheat Flour
.75 c Splenda
2 tsp Baking Powder
1 tsp Baking Soda
1 tsp Salt
1 tsp Cinnamon
.75 c Plain Yogurt
.75 c Water
.5 c Peaches
.5 c Pineapple
Directions:
Mix dry ingredients together in a large bowl.
Add yogurt and water and mix in.
Add peaches and pineapple and mix until completely blended.
Fill a muffin pan with 12 paper muffin cups and fill.
Bake at 400 degrees until a toothpick comes out clean, approximately 20 minutes.
Makes 12 muffins.
Approximately 137calories per serving!

Awesome! Does anyone know if it would work with corn flour or rice flour or almond flour?0

I suppose it could. You could just feel out the texture until it's right....I would try just playing with the amount of flour. It should work out....If nothing else, they're muffins. Texture is all relative.0

Sweet, thanks for the recipe! I've only ever made Betty Crocker or Jiffy (cornbread) muffins before, but I'd like to try this.0

You're very welcome. It took me literally about 10 minutes to put it all together. Easy measurements, easy prep. Just mix the try and add the wet, stir. Super simple!!
