Minimal Carbs

Hello-

I am having a hard time trying to find things that I can eat while watching my carbs. I started today and I am only suppose to have 1400 calories a day and I really want to follow a low carb lifestyle. Does anyone have any advice on things to eat? I also have to cook for an 11 year old so it has to be some what kid friendly.

    Check out the Atkins website. They have tons of recipes on there that vary in carb levels to very low to higher. I've tested a few out, such as portobello mushroom caps with Gryuere cheese, and am trying a recipe they have tonight for Garlic-Lime Bluefish with tomato salad. Everything I've tried so far has been yummy and low carb.

    I do very low carb too. Next time you're near any bookstore, look for low carb cookbooks- they are not really "in style" so about a year ago I got big recipe books for around $3 each.

    I myself eat a lot of omlettes and burgers with no bun, salad on the side. For snacks you can roll up cheese and cold cuts, maybe hold them together with a toothpick? Make your own meatballs, without bread crumbs .. stuff like that?

    There are a lot of recipes online.
