My Porridge Biscuits

Since mentioning the other day about baking my mums famous biscuits I have had loads of emails for the recipe so thought I would share with everyone! Each biscuit contains 40 calories (without adding in choc chips etc)


100g of butter
100g flour
200g porridge oats
50g brown sugar (You could probably use sweetener instead!)
2 eggs
Anything else you want to add - choc chips, rasins etc.

Start by binding the butter and sugar together. Then add the flour and porridge oats, mix together. Bind with the 2 eggs until you get a dough. Add in any other ingredients (raisins taste fab in these!) Roll onto a flat surface until the mix is a few cm high. Use cutter to cut into biscuit shapes. Put into oven for 10 minutes at roughly 200c (this is an average as I dont take notice as I cook quite alot and dont pay attention to the actual temp anymore)

This should make between 40 +50 biscuits!

    I use tescos butter, but only because Im watching the pennies as well - Im sure you could use whatever you want if your more focused on the nutrient side of things!

    Made a batch of them this evening and....wow!! So yummy! I think I made them too big though cos i could only get about 20 biscuits out of it. BUT it might have been a bad idea to make them.....im eating too many! :bigsmile:

    Thanks for sharing the recipe! I substituted the butter for 2 mashed bananas just to make it even healthier; its incredible!

    You should definitely try with Stevia instead of sugar to bring down the calories even more.
