Friendship cake anyone ???

:flowerforyou: My aunt used to make what was called "a friendship cake." Is there anyone familiar with that ???? and if so , do you have the recipe ???? ...and if you have it in a low cal. that would even be better !!!!

    its also called an amish something cake... you can find it on the net...but you will have to find a the starter for it.. cause thats what you do.. start it.. then divide it into large zip loc bags and give it to friends hence.... friendship cake

    Oh, my gosh! I LOVE friendship bread (I grew up with it called bread) We always got the starter...but never had the actual recipie for the starter itself. If you find the recipie, post it or email it to me! Wow...what memories!:smile:

    I found one online....looked like there were some different versions though...

    INGREDIENTS:
    1 (.25 ounce) package active
    dry yeast
    1/4 cup warm water (110
    degrees F/45 degrees C) 3 cups all-purpose flour,
    divided
    3 cups white sugar, divided
    3 cups milk

    DIRECTIONS:
    1. In a small bowl, dissolve yeast in water. Let stand 10 minutes. In a 2 quart container glass, plastic or ceramic container, combine 1 cup flour and 1 cup sugar. Mix thoroughly or flour will lump when milk is added. Slowly stir in 1 cup milk and dissolved yeast mixture. Cover loosely and let stand until bubbly. Consider this day 1 of the 10 day cycle. Leave loosely covered at room temperature.
    2. On days 2 thru 4; stir starter with a spoon. Day 5; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Days 6 thru 9; stir only.
    3. Day 10; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Remove 1 cup to make your first bread, give 2 cups to friends along with this recipe, and your favorite Amish Bread recipe. Store the remaining 1 cup starter in a container in the refrigerator, or begin the 10 day process over again (beginning with step 2).

    That's such a coincidence, I just got a starter from my friend two days ago. Love this bread but haven't made it since January- afraid to know the nutritional info on it!! Will have to have a very small piece for a treat.

    I have one.

    Starter
    1 c. Milk
    1 c. Sugar
    1 c. Flour

    Mix into a large Ziploc Bag. Leave set on the counter top.

    Day 1- Do nothing
    Day 2,3,4,5, - Mash bag twice a day
    Day 6- Add 1 C. Flour, 1 C. Milk, 1 C Sugar.
    Day 7, 8, 9- Mash and let air out of bag twice a day.
    Day 10- Pour contents into a large bowl. Add 1 C. Flour, 1 C Milk, 1 C. Sugar. Mix together

    Measure out (4) - 1 C. Starters into a Ziploc Bag. Give these to your friends. Tomorrow will be day one for them.

    Add to remainder in bowl the following:

    1 C. oil, 1/2 C. Milk, 3 eggs, 1 tsp. vanilla. Mix well and set aside.

    In another bowl, Mix the following ingredients: 2 C. flour, 2 tsp. baking soda, 2 tsp. cinnamon (opt)
    depending on pudding, 5.1 oz box of instant pudding of your choice. ( I use Vanilla and Chocolate)
    1 C. sugar, 1/2 tsp. Salt. Mix well and set aside.

    In a small bowl mix together enough sugar and cinnamon to coat bottom of the loaf pan and the top of the bread mixture.(optional ) Mix dry mixture into the moist one and mix well( add nuts if wanted). Spray 2 loaf pans with non- stick cooking spray and coat the bottom with 1/2 of the cinnamon an top. Bake at 325 degrees for 45 Minutes to 1 hour or until toothpick comes out clean.

    I have used this for years. I hope it comes in handy but I do not know the calorie count. It is good also when you freeze the baked bread for later.

    :heart Hello my mfp'ers. been away a bit due to some medical issues I was struggling with ..Good news is am doing much better and really...really have missed the site. So at any rate .. Holidays close and all .......thought once again about the "Friendship cake" or "Bread" that is made with the "starter "and then Passed on to a "friend " and so on and so on.... Had an aunt that was about to divulge the old "traditional secret " but unfortunatley she lost...yes lost the recipe over grandkids...great grandkids ..and time ! No harm done , I come from a huge family........some one has the original. will get it out asap...especially wth th holidays at hand Glad to be back.     AMISH FRIENDSHIP CAKE

    1 pkg. dry yeast
    1 c. milk
    1 c. flour
    1 c. sugar

    In a glass bowl using a non-metal spoon, stir 1 package dry yeast into 1 cup milk. Add 1 cup flour and 1 cup sugar, stirring until smooth. Cover loosely and place on kitchen counter. Do Not Refrigerate Starter. Count this as day 1. Day 2, 3 and 4 stir mixture. Day 5 add 1 cup sugar, 1 cup milk and 1 cup flour to starter mixture, stirring until smooth. Days 6, 7, 8 and 9 stir mixture. Day 10 add 1 cup sugar, 1 cup milk and 1 cup flour to starter mixture. Starter is now ready to be used to make cake and give to friends.

    AMISH FRIENDSHIP CAKE:

    1 1/3 c. starter
    2/3 c. vegetable oil
    1 1/2 tsp. baking soda
    1/2 tsp. cinnamon
    1 c. sugar
    3 eggs
    1 tsp. salt
    2 c. flour
    2 tsp. baking powder
    1 c. chopped nuts
    1 c. chopped apple
    1 c. raisins

    In a large bowl mix 1 1/3 cups starter with oil, soda, cinnamon, sugar, eggs, salt, flour and baking powder. Beat well until smooth. Fold in nuts, apple and raisins. Bake at 350 degrees in a greased and floured tube pan for 50 minutes. Cool 10 minutes and remove from pan. Remaining starter can be divided into 1 1/3 cup portions and given to friends.

Have ALOT going on , ( you all know it... callled LIFE !!!)     My great aunt called this "herman". You can find other recipes to use with the starter on allrecipes (as BxMom has mentioned). I have made dinner rolls, pancakes, and many types of sweet breads with it. It's easier to make it lighter--just sub applesauce for oil, use whole wheat flour, etc. The good thing about this is the fact that there's already sugar in the starter, so you don't need to add as much sugar as the recipe calls for.

    You may want to try this with the starter that you already have:

    Light Herman Lemon Cheesecake Loaf Cake
    Makes 36 servings

    1/4 cup sugar
    2 teaspoons lemon peel
    2 cups Homemade Herman Starter
    2 cups white flour
    1 cup sugar
    1/2 cup applesauce
    1/2 cup canola oil
    6 egg whites
    1/2 cup Nonfat Skim Milk
    2 teaspoons lemon extract
    1 1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1 1-ounce package Sugar Free - Fat Free Instant Lemon Pudding
    1 1-ounce package Sugar Free - Fat Free Instant Cheesecake Pudding
    2 teaspoons lemon peel

    1. Preheat oven to 350 degrees F.
    2. Grease (use nonstick spray) two large or 3 medium loaf pans.
    3. Prepare the loaf pan dust:
    a. Combine the 1/4 cup sugar and the 2 teaspoons lemon peel (at the top of the ingredient list).
    b. Mix well.
    c. Dust the greased loaf pans with the sugar-lemon peel mixture.
    4. Combine the remaining ingredients. Mix until smooth.
    5. Pour the batter into the greased and dusted pans.
    6. Bake for about 50 - 60 minutes, or until a toothpick poked into the center of the loaf comes out clean.

    I hope you like it. Also, if you make a lot of extra herman starter and nobody wants any, you can always freeze the 1-cup portions and use it to make pancakes or dinner rolls or whatever much later. And give it away with recipes for pancakes (REALLY YUMMY--in moderation) to friends.
