My mom gave this book of low calorie meals.
Its is from the 80’s
What do you think? Should anything change in the recipe?
Stir-Fried Asparagus a la lemon
Makes 4 Servings
Approximately 86 calories per serving
1 ½ pounds fresh asparagus, sliced
1 small onion, sliced
1 small clove garlic, minced
1 chicken bouillon cube
1 tablespoon margarine
2 tablespoon sliced almonds
Grated peel and juice of ½ lemon
Place asparagus, onion, garlic, bouillon cube, and margarine in a frying pan. Stir-fry until asparagus is just tender, 5 to 7 minutes. Stir in almonds, lemon peel and juice; heat through.

I LOVE asparagus. I would only suggest spritzing a non-stick pan with olive oil and eliminating the margarine.
In the summer, I love taking the asparagus to the grill and dousing it with lemon only. That slightly charred taste is just perfect (I think). We made asparagus that way last night for dinner and I'm craving it again. But I'd have to go to the store to get more and with gas at $4/gal, I'm thinking we'll make do with corn on the grill tonight . . .0 -
