Questions about ideal workout shedule?

Well, I've been at it with my exercising and diet changes since Feb 1, and even though I am not even close to feeling "burnt out" yet, I am starting to wonder if I am exercising too often. I do a TurboFire dvd once per day (I was following her perscribed schedule, but recently decided to just do the ones I love) and I do these DVDs 6 days per week. I take one day off each week.
I have read over and over that resistance training is essential, so I have added the 30 day shred to my routine.
SO, what that means for me is 30 day shred daily for 30 days, and still doing my fave turbofire dvds daily, taking one day off per week from turbofire only.
Is that too often to workout? My knees bother me sometimes - I am not sure if its harmless or not. Also, I am wondering what to do when all the weight is gone and I feel like I am at an improved level of fitness. Could I scale my cardio back to 3 days per week, then keep weight training to 2 times per week? Or, will I have to keep up this 6 times per week forever to maintain my results?
