Healthy Packed Lunches....

I need to start taking lunch to work.... but I'm kind of stumped for ideas.

I've taken homemade spiced chunky veg soup before with a slice or two of crusty wholemeal bread.

Sandwiches... just seem boring....

I need some lunch ideas that are healthy but delish.... so I don't leave them in the fridge and run off to the nearest fast food place!!!!

    If you are making dinner each night at home I would just make some extra and pack it up for lunch the next day. Sandwiches aren't too bad if you mix them up a bit. Add lots of veggies in a separate bag to eat with or add to your sandwich and maybe some hummus or roasted red peppers. I found red pepper pesto at Aldi's and I add it to almost everything. It's really good!

    I agree, leftovers are the best for lunch! I always try to make extra veggies when I cook dinner so I always have some handy to take for lunch. Then I can just grab my lean protein of choice to pair with it.

    wow! I have packed my lunches for years, and if you have a micro and fridge at work you are set. You have the tupperware type stuff right? It just takes a little planning. Make extra from dinner. steamed veggies with half a baked potato. cottage cheese and tuna. fresh fruit with yogert. burger patty, with raw veggies and dip. turkey, lettece, veggie wrap. chef salad. I could go on.

    I typically take a homemade salad each day, but shake it up by putting differnet things in it. One day I will have sliced BBQ chicken breasts, the next day 1/2 of the chicken with 1 chopped hard boiled egg, the next day I will save some of my steak from dinner and slice that thinly into my salad, I also like to include 1/2 c chick peas with greek dressing . . . plus there are a ton of different salad dressings to make it quite different each day.
    Today Im heating up some homemade turkey sausage and bean soup for a change too . . .

    I take salad or cut-up fresh vegetables every day. To add protein to my salads, I add hard-cooked egg and frozen shrimp (shrimp thaws in the time before I eat and keeps the salad cold).

    If you have access to a microwave at work, make ahead some meats or entrees and freeze in single-serving portions. I also take a fresh vegetable to cook, like asparagus, fresh green beans, or sweet potato.

    Dessert is a piece of fruit.

    I'll admit, it's harder to take an interesting lunch if you can't use a microwave.

    I always take packed lunch to ...... Easy when you get in the habit (and you have the smug satisfaction of knowing how healthy your are eating!!). You could try salad and chicken or tuna. Soup and crackers is good and surprisingly filling. Fruit of course. Or low-cal bread, turkey ham and rocket (make up night before then grab and run). Hope that helps.
