I did low carb for a couple months...and found a ton of recipes on these sites...the microwaved cheese crackers? too delish and saved me many times from heading for the tater chips.

This is my all time favorite recipe t ho: http://www.genaw.com/lowcarb/creamy_ham_potato_casserole.html

I like simple things. One of my favoite is chopping slices of zucchini, yellow squash, and turkey sausage and sauteeing it on the stove. Also, when craving pasta- or catering to my fiance, who does not watch carbs, I make Dreamfields brand- it's made for low carb diets. I also do baked chicken breasts in alfredo sauce with broccoli- no need for pasta or rice! Also, "Meganne's Magic Tuna Salad" is mashed avocado with hot sauce mixed in, a can of tuna, and a diced bell pepper.

Remember when doing low carb to eat lots of vegetables. Not doing so is a mistake a lot of people trying to go "low carb" do. There are carbs in veggies, but fiber doesn't count as a net carb. Be sure to check nutrition info on various veggies- some are way carbier than others.

It's simple, but how about taco salad? I'm originally from Texas, and the Tex-Mex spices give me the comfort of home without needing a deep fryer. :P

There are a million variations you can use -- virtually any protein, virtually any veggie -- so you can stick within your diet parameters and eat what you like. I'm partial to classic ground beef with cayenne, fresh peppers, and onions on top of a salad of romaine, tomato, avocado, and cucumber. Oh, and a sprinkle of cheese to finish it off.

    Yum!

I'm also doing low carb. Feel free to add me if you'd like to glance at my meals every now and again. :)
