Chicken 'stuffing' meatloaf
1 carrot
2 stalks of celery
1/4 onion
1 tsp. extra virgin olive oil
500g extra lean ground chicken
1/4 c egg beaters
1/4 c 1% milk
2 slices whole grain bread
salt & pepper
Preheat oven to 425. Shred carrot, celery and onion and lightly fry in olive oil and add poultry seasoning (as you would for stuffing) and then cool. In a bowl, add cooled veggie mixture, ground chicken, egg beaters, milk and a little salt and pepper and mix until blended well. Cut bread into pieces and mix into chicken mixture until moistened. Place mixture in a loaf pan that has been sprayed with cooking spray and bake for 30 to 35 mins.
I also made a 'gravy' using oxo, a little flour and 1% milk to serve on top.
Nutritional Information (without gravy)
(for 6 servings)
165 cals, 7g fat, 9g carbs, 18g protein
