Low-Fat Paella

A low-fat paella, adapted from a Weight Watcher's recipe. Prep takes a bit, but it's worth it.

12 oz. chicken sausage
1 tbsp veggie oil
1 large red onion, chopped
1 large green bell pepper, chopped
1 large red or yellow pepper
1 8-oz pkg yellow rice mix
1 zucchini, sliced (frozen zucchini is ok)
1 14.5 oz can diced tomatoes
2 cups water
1 8 oz pkg sliced white mushrooms
3 cloves fresh garlic, finely chopped

1.) Boil low-fat chicken sausage for 40 minutes. Slice and set aside.
2.) Combine onions and veggie oil in skillet over medium heat. Cook until the onions start to turn golden brown.
3.) Add green pepper, yellow/red pepper, zucchini, mushrooms and garlic to skillet. Saute the mixture together.
4.) Switch the vegetable mixture into a slow cooker. Add yellow rice mix, water, tomatoes and sliced chicken sausage.
5.) Slow cook 1-2 hrs on high heat or 3-4 hrs on low heat.

This dish can be made up ahead of time.
