Experimenting with food...THAI STYLE

I just got home from the store and I picked up some oils and a sauce that I have never used before and have no clue even how to use them...so please HELP!!!!!!

Here is what I bought:
Chili Oil
Sesame Oil
Fish Sauce

I do know that these are usually used in Thai and Asian cooking (at least that's what I think)

Suggestions welcome...bring 'em on !!!!!

    You've got a great combination!

    The essence of Thai cooking, is hot/sour/salty/sweet. If you want to make a good thai sauce with your ingredients that would be good with noodles and veggies, mix about a tablespoon of fish sauce (salty) with a tsp of chili oil (hot). You can add to this, a bit of sugar, honey, or even maple syrup for the sweet, and fresh lemon or lime juice for the sour. This mixture will make a great dipping sauce, marinade or stir fry sauce.

    Save the sesame oil to drip a few drops on your meal or at the last minute. It lends the strongest flavour when added at the end, and you just need a tiny bit, drops even, for flavour impact!

    cookiejones - thanks so much...I love THAI food, but have only eaten it out and never know what is in it

    anyhow...one question...(ok 2)...
    (1) the sesame oil is only for flavoring, not to be cooked with...correct?
    (2) if that is true, is the same true for the chili oil?

    Both are there essentially for flavouring, not necessarily for cooking with. Cook with a light oil, and you can save the other oils for flavoring :) If you add the chili oil during cooking though, it will mellow the taste by the end so it's not so hot :)
