Mock Hollandaise Sauce

Had this tonight with fresh asparagus. Mmmmm!

Makes 6 servings, 47 cal per serving

1/4 cup instant nonfat milk powder
2 TBSP lemon juice
1 egg yolk
1 TBSP cornstarch
1/2 tsp salt
Freshly ground pepper
1/2 c cup water
1 TBSP unsalted butter

1. In a small saucepan, whick together first 6 ingredients. Add in water and mix thoroughly. Cook over medium heat, whicking continually, till thickened.
2. Don't boil. Remove from heat and add in butter, mixixng well. Serve hot.
3. Makes approx a cup

    Yep, one serving is just under 3 tablespoons
  • I've made something similar before because I was CRAVING Eggs Benedict and didn't want to kill myself on the Hollandaise. Turns out it's pretty easy to dupe into a healthy alternative.

    I noted that one serving had 47 calories... I just realized that there are actually only 41 cal in a 34 gr serving.
