This was my dinner tonight, it was so delish! And under 500 calories.
One La Tortilla Factory Soft Wrap Multi Grain Tortilla
Filling-
3 oz of canned chicken-drained (went a little over on sodium because I didn't have low sodium canned chicken but fresh shredded chicken breast would probably be even better!)
1/4 cup of Tillamook shredded Mexican blend cheese
1 TBSP of Tillamook sour cream (sub light if you want)
1 TBSP of your choice salsa--I like Newman's Own Mild chunky salsa
Mix all these ingredients together and spread over half of tortilla...fold in half...bake on a cookie sheet in oven at 350* until cheese is melted and contents are hot. Remove, cut into quarters...
Top with half an avacado (mush it with lemon juice/pepper/and garlic powder for an easy guac!) and 1 cup of fresh spinach (or your choice lettuce)
I entered all this in to MFP and it came to 492 cals...and I was STUFFED! If you sub out the sour cream for a lighter option and use a little less avacado you could bring it down to 450 easily Plus lots of protein fiber and some good veggies!
