Tuna and White Bean Salad with V8® Dressing

Ingredients

Dressing:
1¼ cup (300 mL) V8 V-Plus® High Fibre Vegetable Cocktail
1/4 cup (60 mL) extra virgin olive oil
1/4 cup (60 mL) apple cider vinegar
2 tbsp (30 mL) each, honey and lime juice
1/2 tsp (2 mL) each, garlic salt and ground black pepper
Salad:
1 package (226 g) mixed salad greens, chilled
2 cans (170 g each) tuna, packed in water, drained
1 can (540 mL) white (navy) beans, drained & chilled
1 cup (250 mL) halved cherry tomatoes, chilled
1 small English cucumber, cut into ribbons, chilled

Directions
1. Mix all dressing ingredients (except for V8® cocktail) in a blender. Gradually add V8® cocktail. Refrigerate.
2. Toss salad greens with tuna, beans, cherry tomatoes and cucumber.
3. Toss salad with 3/4 cup (175 mL) dressing just before serving. Place into a chilled salad bowl.

Per Serving: 369 Calories, 8g Fat, 1g Saturated Fat, 28mg Cholesterol, 389mg Sodium, 48g Carbohydrate, 12g Dietary Fibre, 29g Protein, 13% DV Calcium
