Double Chocolate Meringues (19 cals per cookie!)
Just made these and they are amazing, tastes like a brownie on the inside!
Double Chocolate Meringues
3 egg whites (at room temp)
1/8 tsp cream of tartar
1/2 tsp vanilla extract
1/2 cup sugar
2 tablespoons unsweetened cocoa powder
1/4 cup mini semisweet chocolate chips
Preheat oven to 300 degrees F.
Beat egg whites with a mixer in a clean glass or metal bowl until foamy.
Add cream of tartar and vanilla extract. Beat until soft peaks form.
Add sugar, one tablespoon at a time and beat until stiff peaks form.
Gently fold in cocoa powder, then chocolate chips. Be sure not to over mix and break down the egg white mixture.
Drop by spoonfuls onto parchment lined cookie sheets.
Bake 25-30 minutes, until tops are dry and crisp. Cool. Store in an air tight container.
I got 39 regular size cookies out of the batch. So the nutrition per cookie came out to be: 19 cals, 4 carbs, 0 protein, 0 fat, 3 sugar

I had never tasted meringues before and I am really surprised how yummy and rich they are! They do not taste like a low calorie substitute for a treat!
These were super easy to make too! I think next time I will even try using 1/3 cup of sugar instead of 1/2 because they are pretty sweet.0 -

19 cals? I'M IN!! These will be perfect for Easter-- I think I'll make the and surprise my fam. My aunt is also on her own weight loss journey, so it will be nice for the both of us to be able to munch on some of these cookies, guilt-free!0

You can use a splash of lemon juice instead.
I bake a lot and never use the cream of tarter just a bit of lemon juice, but you probably could do without it if you don't have either.0 -

I believe the cream of tartar helps to add volume and stiffen the egg whites. I've heard you can use lemon juice instead and there are also recipes that don't use either.
Egg beaters or liquid egg whites do not work for meringues (says so on the carton I think) but splenda shouldn't be a problem.0 -
