OTR Truck Trivers

I know I've seen a post or two from long haul truckers here. My SO just joined and drives a truck. Was wondering if anyone had some suggestions for healthier eating on the road for him that I can pass along. Maybe healthy snacks and stuff he can keep in the truck. He has a small fridge and will be getting a cooler. Some ideas particularly for softer veggies would be welcome. The truck stops are getting better at carrying some fruits, but not so much for veggies, though he can pack some.

    My hubby is OTR and isn't on here (although I wish he was) but he eats out of his fridge most of the time. He does a lot of sandwiches and oatmeal (he has a microwave) and eats salads when they are available at the truck stops but tries not to eat a lot of the junk they serve. It's really hard for him to get motivated to lose weight, especially when it comes to the exercise. I wish there was some way he could get some cardio in everyday, it's so hard to see him maintain a rather unhealthy weight. I want him to be around for our old age!!!!
