Veggie Omelette

One of my favourite things to make (i'm about to make some for lunch when i finish writing this :smile: ) Is a veggie omelette.

You will need:
- Mushrooms
- Zucchini
- Capsucum
- Tomato
- 2 eggs

slice up all the veggies and fry them up together in a pan, until they're cooked through.
whisk up the eggs with about 2tbsp water, and pour them into another pan (make sure it's nice and hot!) and make sure it covers the whole pan.
Once the eggs are almost cooked, spoon the veggie mixture onto half the egg, and flip the other half of the egg over the top to make an omelette.

So i'm not great at giving cooking directions, but you get the idea, and it is AMAZING!

  • I make that all the time! :) they are delicious! Tip: instead of 2 whole eggs use 1 egg and 1 egg white (so without the yolk) for less calories (60)!! :)
