Energy Cookies (courtesy of my wonderful nutritionist!)

These cookies are amazing and great if you are running late (like I usually am) and need a quick snack or energy boost! Also I love it because it's the easiest recipe EVER - just throw everything into a bowl and mix it up, then put on baking sheet and bake! My kind of cooking! ;)



2 1/4 cups rolled oats

2 cups spelt flour

1 cup sunflower seeds

1/4 cup pumpkin seeds

1/2 cup unsweetened coconut

1/4 cup flax seeds

3/4 sucanat (cane sugar - available at health food stores)

1 tbsp cinnamon

1 tbsp salt

1/2 cup carob chips

1/4 cup water

1/4 cup molasses

3/4 cup canola oil

1 cup skim milk



- mix everything together and bake at 350 for 15-20 mins

- makes about 24 cookies
