Looking for a mashed cauliflower recipe...

I just saw this potato substitue on another thread and was curious if anyone had a recipe for it.

It sounds like a great low calorie swap for our beloved garlic mashed potates; of which we haven't had in a long time because it "costs" too much in calories...

    Go to the recipe forum's! I think there is a recipe using mashed cauli with egg to make pizza crust too!!

    I am on a low-carb diet, so mashed potatoes are out for me, too. I found a recipe at SugarFreeSheila.com/RecipesPage.html

    I like mashed cauliflower "mock" potatoes.


    a head of cauliflower steamed until just barely over done.

    1/4-1/2 cup half and half or milk (I like the low calorie half and half)

    mash in a bowl

    add seasoning and potato toppings of choice.. I like chives and low fat sour cream (some people use greek yogurt)

    Boiled Canellini beans and a little bit of horseradish sauce also makes a fantastic mash :)
