Has anyone tried these and figured out the calories? I cannot seem to get them to be 76 calories per serving (1/2 batch) ... Buttermilk is 110 calories per 1 cup and this receipe uses 2.25 cups?!

There is a note in the recipe that says:

"Note: I was left with 2/3 of the crumb mixture and 2 cups of the buttermilk after these were done, which I deducted from the nutritional values."

I tried these just a day or two after the recipe was posted. I liked them but my husband wasn't overwhelmed. The recipe makes two cookie sheets of rings. My first batch was great - the breading stayed on pretty well. The second batch did not go well. I ended up just sprinkling the breading on top of the onions. I think other people had the same issue. Just something to keep in mind.

For about 100 calories (my calorie count came out a bit higher than hers), you can't beat them, though!

FINALLY made these last night - but I meant to make 'em a few days ago, so the onion rings ended up soaking in the buttermilk for about 4 days, lol!

HINT - I mixed the Panko/breadcrumb mixture in a glass container, but I only put about a fourth of the mixture in the tray I was using for the onion rings. Just about the time the crumbs didn't wanna stick anymore there wasn't much left in the tray, so I added more "fresh". This helped the coating to stick to the entire batch, doing it in small amounts like that.

    Yummilicious!

    :drinker:
