My hubby has had a super busy week at work. Yesterday he flew to Florida and back and his flight was delayed coming home, so he walked in the door around 2:30 am....and then had to be up by 6:30 because he had to drive out to New Jersey for meetings with a client there......he is on his way home now and earlier I had offered to make him a special dinner since it's been so rough and he asked for lasagna! LOL! Always the same thing!

SO, I just assembled it and it is in the oven baking and getting all bubbly and cheesey-melty.....with meat in it too! Granted it is italian turkey sausage but still! GRRRRR! These are the moments that test us FOR SURE!!!! I MUST resist!!!!

Do you have any extra sauce left?! Try pouring it over sliced zucchini or eggplant (lengthwise), top it with shredded reduced fat Italian cheese, and pop it in the oven to melt so you can have something similar without feeling so deprived! Next time try making it with whole wheat lasagna noodles and use reduced fat cheeses so you can enjoy it, too! :)

The zucchini/eggplan sounds good! I will try that! Thanks!

I COULD have made it the healthy way.....but my hubby is almost 6'4" and about 195, so HE can eat it no problem and I wanted him to have the real stuff!! hehe.....my son can have it for dinner as well. I will see what I have...I can maybe boil up some whole wheat rotini and have that with some sauce. Hmmm!!

You should have a little piece and a big ole salad like rogers8702 did. Then get rid of any leftovers (if there are any) so you won't be tempted to eat more. Yum that does sound good though.

    I second the eggplant idea!
I made Eggplant parmigiana the other day and it wa ssoooooooo good. I've never liked eggplant until 2 days ago.

I say go for it Tiramisu... make yourself a yummy, healthy eggplant parmigiana!

I actually do make a healthy eggplant parm...I bread the sliced eggplant in breadcrumbs and then bake them until they are golden and crispy and then assemble the dish....takes A LOT of the fat and calories off by not frying it! :) This lasagna smells heavenly!!

I made this amazing dish the other night that tasted like lasagna and basically had all the components but was just under 300 cals for 1/6 of the recipe (good sized serving!) May not work for tonight but next time they want lasagna try this!

sautee 1 onion and 2 cloves garlic in 1 tbsp olive oil. Add 1lb extra lean ground turkey and cook through. Drain any fat, return to pan and sautee 1.5 bell peppers (I used .5 red and 1 orange). Meanwhile, cook 1 cup brown rice fusilli pasta. Combine drained pasta with meat & veggies in a casserole dish, stir in 1/3 cup tomato sauce (I used an organic roasted red pepper sauce). Top with 1/2 cup skim milk cheese. Bake for 20 mins at 350* and it's FABULOUS!!

I just had all the ingredients the other day and tossed it together and it's my new favourite meal.

I fried my eggplant b/c this dish was for hubbz and his dad. I used hubbz homemade pasta sauce & fresh mozzarella. I only had a few bites though:huh:

If you don't want to cook anymore than you already have, I say enjoy it with your hubbz.
