Whole Wheat Pumpkin Spice Muffins just 86 calories each

I tried making these low fat muffins last night and fell in love. Super tasty and low in calories!
• 2 cups whole wheat or whole wheat pastry flour
• 4 tsp Sweet and Low (or other sugar substitute. The original recipe calls for 1/2 cup sugar)
• 1 tablespoon baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 teaspoon cinnamon
• 1/4 teaspoon nutmeg
• 1 15-ounce can solid-pack pumpkin
Preheat oven to 375°F.
Mix flour, Sweet and Low, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl.
Add pumpkin and 1/2 cup of water. Stir until just mixed.
Spoon batter into oil-sprayed muffin cups, filling to just below tops.
Bake 25 to 30 minutes, until tops of muffins bounce back when pressed lightly. Remove from oven and let stand 5 minutes. Remove muffins from pan and cool on a rack. Store cooled muffins in an airtight container.

BUMP! I'm a muffin fanatic!! I just made some whole wheat pumpkin muffins the other day.....they were good, but I'm still looking, because they can always get better...especially at only 86 calories! Thanks for posting!0

Also, when I went to get these stats, I saw that I was actually off by 5 calories, only 81 calories per serving! It just keeps getting better!0 -

I just entered the recipe into MFP. Here is the rest of the nutritional info:

17 carbs
1 fat
3 protein
398 sodium
4 fiber
It was hard for me to believe the amount of sodium in the baking soda, baking powder and salt. I even double checked to make sure I entered the correct amount. I also figured this using splenda
