Prawn Noodle Soup
This is my variation of an Egg Drop Soup....it is quick and very taste. I have not worked out the totals yet.
2 cups chicken stock
1 green onion, thinly sliced
1 teaspoon finely chopped fresh ginger
2 teaspoons soya sauce (or more if you prefer)
10 peeled prawns, cut in half
Fresh Udon noodles (I used 1/2 cup per person)
1 egg, beaten lightly
Heat the stock, green onion and ginger until boiling. Add the prawns and noodles and bring back to the boil. Cook 1 minute. Using a chopstick, add the beaten egg stirring constantly.
Now enjoy!
