soak your nuts

Do you know that if you purchase nuts that have already been shelled you should soak them in water for about an hour before you eat them? Of course the easy way around this is to buy nuts that are still in their shells (helps with portion control too! - you think about how many you're eating when you have to shell them!). The reason is that when nuts are pre-shelled and sit out, they develop a protective coating and the result is that all of the great nourishment in the nut is significantly less bioavailable. SO, soak your nuts!
(of course, you can also chew them for 3-4x longer than normal bits of food but upon practice this is actually quite a challenge...)

I've been meaning to mention this for ages!!

    Doesn't it all end up in the stomach and intestines to be broken up and have the nutrients absorbed? Wouldn't that break it down enough?

    I should get a book to learn about this stuff because it confuses me.

    Digestion (for pretty much everything) begins in the mouth. If nuts aren't either fresh-shelled, soaked, or chewed amazingly well then you end up passing much of the nourishment before your body can break it down. My naturopath let me in on this.
