I ran out of spaghetti sauce once so I decided to make my own with what I had in the fridge (I was too lazy to go to the store). This is great warm.. but also is fantastic cold as a pasta salad.

1 can of whole tomatoes (I prefer alymer's brand) (chopped) - Save the tomato juice in the can and add to sauce to make it as thick or light as you prefer.
1 - 1 1/2 white onions (diced or chopped)
Bell peppers (1 of each, red and green)
2 cloves of garlic (minced)
Olive oil to pan
Spices to taste (My favorites for this, parsley, oregano, basil, cayenne, and crushed red chili peppers).

1) Add olive oil and garlic to pan to soften the garlic.
2) Add and saute bell peppers and onions until semi soft.
3) Add chopped tomatoes and spices and saute until warm. (Add as much or as little of the tomato juices as you prefer.. can always be strained out later).
4) Serve over warm cooked whole grain pasta.. or chill sauce and serve on cold pasta as a cool lunchtime meal. :)
