looking for low cal muffin recipes

I love muffins and they are so easy to grab and go, so I am looking for more recipes that are healthy, delicious and guilt free!

    Apricot Pecan Oatmeal Muffins Makes 12 muffins

    1 cup quick cooking oats
    1 cup buttermilk
    1 cup all-purpose flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1/2 cup dried apricots, chopped
    1/2 cup chopped pecans
    1/3 cup canola oil
    1 egg
    1/2 cup brown sugar, firmly packed


    DIRECTIONS:

    Place oats and buttermilk in a bowl. Stir to combine. Cover and let stand for 20-30 minutes. In a large bowl sift together flour, baking powder, baking soda and salt. Stir in apricots and pecans. Add oil, egg and brown sugar to the oatmeal mixture and combine well. Pour the oatmeal mixture into the flour mixture. Stir just to moisten the dry ingredients. It will look lumpy. Divide batter into 12 greased muffin cups.

    Bake in a pre-heated oven at 375 degrees for 20-25 minutes. Remove muffins from muffin tin and cool on a wire rack.

    This is not cupcakes but I have made them several times and now I have to keep them in the freezer. lol I think they are awesome. Have shared recipe with many others and the feedback was really good. Hope you try them.

    Got this from Dr. Oz's site. I figured out that it was 203-205 calories per muffin. Sorry the nutritional information was not listed.

  • Mini Lemon Muffins



    1 1/2 cups flour

    3/4 cup sugar

    2 tsp baking powder

    1/2 tsp salt

    1/2 cups unsweetened applesauce

    1 tsp vegetable oil

    1 egg

    1/2 cup low fat/ fat free milk

    grated lemon zest of 2 large lemons



    1. Preheat oven to 350

    2. Mix all ingredients until just combined, do not over mix.

    3. Pour into mini muffin pan lined with muffin liners evenly (makes 32)

    4. Bake for 10 minutes.

    5. Cool and enjoy.



    I used 1 cup of wheat flour and then 1/2 cup white. I also used 1/2 cup sweet and low and 1/4 regular sugar to make it a tad bit more healthy and calorie friendly :)

    They were about 34 calories per mini muffin.

    buy a box of "oat bran" and they have a recipe for oat bran muffins. Make them all the time! They're good and you can substitute or add things to it that you like. For example, I use almond milk instead of regular milk. You can google oat bran muffins recipe and it should show up. Also good if you're following the GI diet. =)

    Ingredients
    1-3/4 cups all-purpose flour
    1/2 cup granulated sugar
    2 teaspoons finely shredded orange peel
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1 egg
    1 8-ounce carton orange-flavored yogurt
    1/3 cup cooking oil
    1 teaspoon vanilla
    1/2 cup sifted powdered sugar
    1 to 2 teaspoons orange juice


    Directions
    1. Preheat oven to 400 degree F. Lightly grease thirty-six 1-3/4-inch muffin cups or line them with paper bake cups. Set aside. In a large mixing bowl, stir together flour, granulated sugar, orange peel, baking powder, baking soda, and salt. Make a well in the center of flour mixture; set aside.2. In a medium mixing bowl, slightly beat egg. Stir in yogurt, oil, and vanilla. Add egg mixture all at once to the flour mixture. Stir just until moistened (batter should be lumpy).3. Spoon batter into prepared muffin cups, filling each three-quarters full. Bake in the preheated oven about 10 minutes or until tops of muffins are golden. Cool in muffin cups on a wire rack for 5 minutes. Remove muffins from muffin cups and cool completely.4. In a small bowl, stir together powdered sugar and enough orange juice to make a glaze of drizzling consistency. Drizzle or brush glaze over muffins. Serve immediately. Makes 36 muffins.To Make Ahead
    Place baked, glazed muffins in airtight containers; cover. Store in a cool, dry place up to 24 hours. Or place baked, unglazed muffins in a freezer container; seal. Freeze for up to 3 months. To serve, thaw muffins at room temperature, then glaze.

    I got this recipe off of here and I have been using it ALOT! Not a sweet muffin but great for in the rush mornings!


    Sausage Cheddar Muffins

    2 cups heart smart Bisquick
    3/4 cup skim milk
    2 cups Jimmy Dean Turkey Sausage crumbles
    1/2 cup fat free cheddar cheese
    pepper to taste

    mix bisquick and milk. fold in cheese and sausage crumbles add pepper. Put in 12 muffin pan (sprayed with nonstick spray) Bake at 375 until brown.

    When I put it in the recipe builder it came out to 103 cals

    I'm going to start trying making my muffins with stewed fruit instead of the oil/fat component. I've got a nice recipe for Oat, Pear and Berry muffins, and I reckon I can knock the calories back from about 140 to 70ish by changing it around. Will have to see how they taste though....

    I make these muffin which have really good reviews. It only has 123 calories per serving (12 muffins total) if you go by that recipe but I made some substitutions 1. Used 1/3 cup of brown sugar instead of 2/3 cup 2. Used 1/3 cup of Splenda 3. Instead of milk I used Unsweetened Vanilla Almond Milk 3. Instead of one egg I used 1/4 cup of egg substitute. For my muffins the calorie count was 96 per serving (yields 12). I personally liked it and so did my family.
