Cheap Quick Healthy Food?

So I really don't have alot of time. I make the time to work out though, but cooking just takes so long and some days I don't get home till 7 or 9 and I have homework to work on. I want some meal ideas under 550 calories that are healthier options. Not lean cuisines, I"m burnt out on those

    I just learned this easy great way to make omelets if you like eggs:

    Its called ziplock omelet

    mix your eggs and whatever you like in it (peppers, onions, cheese, cooked meats, whatever floats your boat)
    then put it in a ziplock baggie and drop in a a pot of boiling water
    for about 10 minutes
    pull it out and wal-la a perfect omelet with an easy clean up!!

    I make a vegetarian chili that can be frozen - all you need to do is defrost and it re-heat it.

    Ingredients:
    1 medium onion
    2 cloves garlic
    250g mushrooms
    1-2 zucchini
    1 red pepper
    1 green pepper
    1 can of kidney beans
    1 can of butterbeans
    1 can of chickpeas
    1 can baked beans (low sodium and low sugar)
    1 can chopped tomatoes
    chili seasoning (how much depends on how hot you like the chili)

    Finely chop the onion, garlic and both peppers
    Chop the mushrooms and zucchini into small chunks
    Heat a large pan or crock pot and spray with 1 cal spray oil (I use about 10 sprays)
    Add the onion and garlic to the pan and cook until very lightly browned
    Add the mushrooms and zucchini with 2 teaspoons of water
    Add the chopped tomatoes, kidney beans, butterbeans and chickpeas and simmer for 10 minutes
    Add the baked beans and simmer for 5 minutes
    If at this stage it's looking a little thick, add in some more water
    Add the peppers and cook for 1 minute
    Serve with wholemeal rice

    *This makes between 4-5 portions depending on how big the portions are and it's really filling.
