Quick and easy soup

This is a soup I make when I'm short on time or have just come in from work and need something fast for lunch.

1.5 cups of chicken broth. I use Pacific organic low sodium.
1 cup of canned black beans, rinsed. I use Unico.
1 bunch of baby bok choy. You can use regular too but I like the baby.
5 or 6 green onions.
Crushed red or chili pepper flakes to taste.

I put the chicken broth, red pepper flakes and beans in the pot and set it to boil. While I'm waiting for it to boil, I chop up the green onions and the bok choy. When it boils, i put the vegetables in, put it to simmer and simmer about 5 minutes.

Makes a filling soup for one. The chili peppers give it an edge. The whole process including opening cans, chopping etc from start to eating is less than 15 minutes.

The whole thing is 311 calories, 56 carbs, 22 protein. (Do not be afraid of the carbs. I'm a Ty 2 diabetic and that amount of carbs is in-line with what you are supposed to eat each meal. )

    Sounds good, I'll have to try it! I love soup of any kind, but strangely enough, I don't care for creamy soups so this sound really good!
