Mexican Chicken

4 boneless, skinless chicken breasts boiled and diced or shredded (I prefer mine shredded)
1 can of 98% fat free cream of chicken soup
1 can of mild (or regular) rotel
9 corn tortillas
2 cups of mil shredded cheddar cheese

Mix all ingredients together except the tortillas. In a deep casserole dish layer tortillas and mixture with tortillas on the bottom and and the mixture being the final layer. Bake at 350 for about 20 mins or until hot. Yields 6 servings and is about 370 calorie per serving. You can decrease the serving portion to save calories or use low far shredded cheese. It's YUMMY and really quick and easy!

    Sounds yummy! Too bad I have super picky kids who don't like their food mixed togther... gets rather boring!

    Yes I have those too unforunately and those nights they get chicken strips, fruit and a veggie =)
