Spanish Rice
Options
1 lb extra lean ground beef (97/3)
1 can of petite diced tomatoes
1 cup of white rice
1/2 cup of diced onions and bell peppers
Cook on the stove top in a skillet - mix all above ingredients and cook for about 20 to 30 mins on medium heat. Quick, easy and very good. Makes four 290 calorie servings. Each serving is about about a cup and is very filling. I think I am going to try brown rice next time to see if it tastes better.
