Here's a recipe for lentil and walnut burgers.
2 medium onions finely diced
2 garlic cloves, crushed
1 cup red split lentils
2 cups water
1/2 tsp dried rosemary
1/2 tsp dried thyme
1 bayleaf
3tbsp tomato paste
1.3 cup finely chopped walnuts
salt and black pepper
rice flour for coating (could use regular flour - this is from a wheat free book)
Place onion, garlic, lentil, herbs and water into a pan and bring to the boil. Reduce to a simmer, cover and stir occasionally until the mixture becomes a this puree. Takes approx 40mins (although this happened a lot quicker for me last time!) Remove the bayleaf. Stir in the tomato paste and walnuts, add salt and pepper to taste. Allow mixture to cool.
Sprinkle flour onto a work surface, divide the lentil mixture into 8 and flatten out into a pattie, coat with flour (not too much).
These can be cooked in a pan coated in 1 cal oil spray or baked in the oven (not too long or they'll get really dry).0 -
I am actually making this right now, yes at 4am. It is so tasty... if you like Indian food, then you will love this. I have made it at least 4 times and it freezes well. The only changes I make are instead of butter I use 1T olive or canola oil, and I use light coconut milk. Give it a try.

What a wonderful group of people we have here! I was pleasantly surprised when I saw recipes and comments right the way after posting (this was my first time). Thank you for your recipe ideas and websites. I have added them to my Favorites so I can browse and choose when I need something different and tasty.
I think I went a little overboard today becasue I am cooking 4 different dishes: suffed zucchini with quinoa and vegetables, stuffed poblano peppers with brown rice and vegetables, vegetable soup which I will blend (never done it before but saw the idea here) and later I will make some banana cookies I found here also. I have not had cookies for quite some time, a month or so Ithink and that is a very long time for me.
I do not cook every day so I fugured this way I will have plenty of home made healthy food to bring to lunch at work.

If you're asking about the burger recipe Beanie - I input it all into the MFP recipe planner and it came up with this per serving:
Cals 143
Carbs 12

Protein 5

One of my new favorites: Black bean burgers paired with baked sweet potato fries, and veggies as a side salad or burger topper. The burger recipe calls for pumpkin seeds, but I find that sunflower seeds work pretty well. Both are pretty easy to make, delicious, and healthy!
