going vegetarian?

any tips? i'm considering going vegetarian not just for health reasons but also for ethical reasons. i was a veggie back in high school, but did it in an unhealthy way...low iron, not enough protein, etc. thankfully my palate has expanded and i actually eat things like tofu now!

tofu, quinoa, and eatingwell.com lol. I love searching that site for new vegetarian recipes to try. I made the following recipe last night and it was delicious! You're welcome to look at my food diary for any ideas.

I've found taking a multivitamin and/or iron pills every day helps a lot. Another good recipe hub is vegweb.com.0

Quorn, frys there are plenty out there going off meat cold turkey ain't that hard though.0 -
I am vegetarian right now except for eggs and fish. I am doing eggbeaters and tuna several times a week. Of course, beans and other legumes are pretty much a staple for me. I add different types to just about every meal, on salads, and on my daily ration of long grain brown rice. One thing that seems to help me are the varieties of "transition" type foods, garden burgers and the like. I am beginning to get very choosy with them, and studying the ingredients and the nutritional labels on them very carefully. So many of them are loaded with too much sodium. I did find a brand, sunshine burger, that seems to be comprised of all organic, natural ingredients. Nothing at all in there that seems like it came from the chemistry set that I had in grade school! Until I can figure out a way to make my own garden burgers, the frozen, transition foods are helping me out a lot. So if you haven't checked them out already, give em a whirl.0
