Help for a fussy eater

Hi,
My husband is a fussy eater. It has taken me 13 years to get him to try curry - starting with chicken tikka and chips his latest achievement is Chicken Sagwala with chips of course.
Before we were married his diet was largely chocolate, Kentucky Fried Chicken, McDonalds and Chips from the chip shop.
We exercise alot 3-5 times a week - cycling anything up to 80 miles or more a week when the weather allows or else you can find us at the gym three times a week, mixing cardio and weights.
Peeking at his diary he obviously struggles to eat his calories especially the extra exercise calories.
Has anyone got any tips for moving him forward to help weight loss
A typical day would be
Crunchy Nut cornflakes and Semi Skimmed Milk
2 x wholemeal rolls with butter, ham or butter cheese and pickled onions
packet of crisps
Tea is either
Frozen Chicken breast with chips (no veg) (ie Birds Eye Southern Fried style)
Steak and Chips with peas, onion rings
Crispy Minced Beef Pancake and chips
Fajitas made with southern fried chicken ( 3 pieces = 270 calories) 1 - 2 wraps, onion and chilli sauce
Sunday dinners consist of meat, roast potato, yorkshire pud, peas.
Any help would be appreciated.
