Spinach & Black Bean Enchilada Recipes?

Does anyone have a low-cal Spinach & Black Bean Enchilada recipe? I've been searching around and haven't found too many.

    Would love to see some suggestions for this as well.. two of my favorite items that I always have in the house!

    I don't have an official recipe, but the ones I've made at home just spur of the moment are:

    corn tortilla

    precooked spinach

    black beans drained from can

    salsa verda (jar type - green salsa)

    tiny bit or whatever you like!! jack or pepper jack cheese

    mix all ingredients to wet them , then wrap in corn tortillas.

    Lay out in pan, little more salsa and cheese on top.

    I use all low fat corn tortilla and cheese types, sodium can get high from jar type salsa.

    You can bake them off 350 till heated all the way through.

    I like this one as a base and add a few things to it like avocado after baking or red sauce.

    You haven't found too many recipes? Or too many that are lo-cal? Once you add in beans, tortillas, and everything else that goes into enchiladas they aren't necessarily going to be lo-cal. But you can keep them pretty healthy: reduce or cut out things like cheese and replace w/brown rice, sweet potato, tofu or other healthy items.
