Not really a "recipe", but an easy sweet tooth-satisfying treat similar to S'mores:
Take 8 chocolate mini rice cakes (Quakes) and 2 large marshmallows. Cut the 2 marshmallows into 2 halves (so that they are still round, just shorter Place each 1/2 marshmallow between 2 quakes and microwave for about 15-20 seconds (watch them and stop the microwave when the marshmallows start to puff up). ENJOY!

I love a merangue nest broken up with fat free yoghurt, strawberrys and fresh mint. If you leave it for 10 mins before easting the merangue start to go soft, yummy! Merangue nest 55 cals, 125g onken fat free strawberry yoghurt 68 cals 0.5 cup of stawberrys 25 cals so just under 150 in total with the bonus of some fruit!0

So funny, it just dawned on me today that I won't be able to have smores anymore. (Have to eat gluten free now) and we always have smores when we go to the beach house, so I was thinking, hmmm how could I make smores work with rice cakes?! I will have to try this!0
