I've been making pizza on wraps to curb my fast food cravings. Take a wrap, spread some sauce on, pile with your fave veggies. sprinkle on some low fat cheese, and put it in the oven. Just keep an eye on it, because it crisps up pretty fast.0

get the frozen salmon fillets and put them in a ziploc bag with soy sauce, garlic, wisabi powder and red pepper flakes and bake it in the oven until its done, i usually serve it with green beans and garlic0

I make a really easy chili by browning a pound of 93/7 ground beef and adding a can of chili beans and a can of chili tomatoes. It's yummy!0

Tonight we had turkey burgers on Arnold thin slice buns with red onion and pineapple, it was yummy and quick!0

Easy "almost homemade" chicken enchillada casserole:
I've modified this from several other recipes and used precut veggies, cans and rotisserie chicken to make super simple prep. You could further decrease your calories and salt by dicing fresh tomatoes and using homemade shredded chicken breast.
Saute 2 bags of baby spinach (add a little at a time as it wilts down) and 2 8oz packages of sliced mushrooms in 2 tablespoons of olive oil in a large skillet with a pinch of garlic salt. When cooked, add a can of diced tomatoes or rotel and 1/2 of the meat from a deli rotisserie chicken shredded without the skin. To all of this add 3/4 container of Philly Cooking Cream Santa Fe flavor (save the rest for the end) and 4 oz. fat free sour cream and mix well. This will be your filling.
In super simple prep, I spray a casserole dish with cooking spray then place 2 flour tortillas on the bottom of the pan, spread about 1/3 of the filling on top, layer on 2 more tortillas, layer on 1/3 filling, 2 more tortillas then spread the last of the cooking cream onto the top of the final tortillas. Bake in a 350 oven for about 20 min to soften and warm through. Of course you could roll the enchilladas separately and then drizzle the remaining cooking cream over top.
I made this today and it made 5 generous servings of about 550 cal each if you use homemade chicken breasts. Probably add about 100 cal/serving if you used a rotisserie chicken.0 -
Tonight I had a delicious salmon "burger." I cooked a salmon filet and put it on a wheat bun with sliced red onion, lettuce leaf, and a little bit of tartar sauce. Paired it with a side of broccoli and had enough calories left to have a glass of wine too!0

My menu this week includes shrimp soft tacos with black beans and rice, sloppy joes with Laura's Lean ground beef and whole wheat buns and a small salad, turkey meatloaf with broccoli and couscous, chicken on the grill with a small salad. This is for a family of 4 with 2 kids and so far they eaten everything and liked it.0
