Mashed cauliflower

Does anyone have a good recipe for these will be eating it with ham...

    I just had some with a nice steak the other night!!

    All I did was made it EXACTLY liked mashed potatoes!

    I steamed an entire head and then drained the water and mashed it. Added 1 tablespoon of butter (I don't eat margarine but you could substitue), salt, lots of pepper and a splash of heavy cream (meaning a tablespoon or two). If you split that in 2 or 4 servings it's really amazingly low cal, low fat and low carb! But MM MMMM satisfying

    I'm going to try to make mashed cauliflower this weekend. I'm going to add a little cream cheese, some parmesan cheese, and roasted garlic. Yum!

    If you like bleu cheese I had some fall off my steak and into my mashed cauliflower the other night and it was freakin AWESOME!!
  • whatever you do, DRAIN the cauliflower well.. and when you think you've drained it enough, blot it with a paper towel again BEFORE mashing...
