replenishing calories

So, I am a HUGE fan of my boot camp and fat blaster Tae Bo workouts, but my only problem is how to replenish those calories. Do I need to replenish all 859 calories or just a few? It's just hard to eat healthy and eat enough healthy food all day to workout hard and all of a sudden I have 1200 more calories to go! It's hard! I was wondering if anyone had any tips or could help me out?!
