Vegetarian Chili and Confetti Salad
This is beyond easy!
Vegetarian Chili
1/2 c chopped onion (more if you like!)
1-2 chopped cloves of Garlic
Trader Joe (or other brand) soy chorizo
Cook together to soften the onions
Add 1 can each black beans, kidney (or other bean of choice, don't bother draining them) and fire roasted tomatoes
1T chili powder, onion powder
Cook together and serve with soy cheese, soy sour cream and avocado as desired
Use My recipes to get the caloric values but it is super healthy and filling.
Confetti Salad
Drain 1 can each black beans and garbanzo (or other white bean)
Chop evenly one each red and yellow peppers (or any color combination you want
1/2 c copped red onion
Toss with 2Tbl orange juice, 1tea lime juice, salt to taste, 1/2 tea chipolte chili powder and 1/4-1/2c chopped cilantroAgain you can add some sliced avocado to this at serving time. It stands up well but rarely lasts that long.
