Flaxmeal yoghurt pancakes

Makes about 6 pancakes.

3/4 cup flax meal
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
sweetener of choice
1 egg
1/4 cup greek yoghurt
1/3 cup water
1/2 teaspoon vanilla

Mix dry ingredients together and mix well.

Add yoghurt, water, egg, and vanilla.

Mix well. Add more water if batter is too thick.

Spoon on greased hot griddle.

Cook on low temperature until almost cooked all the way on one side, then flip to brown the other side. Takes longer to cook than regular pancakes and will burn if the heat is too high.

try adding blueberries or othe fruit!

    I used date sugar, but if you use stevia packets or Splenda I'm sure 2 is enough .... or about 2 tsp of white sugar.

    Calories according to MFP if you use one whole egg and sugar as the sweetener and low fat greek yoghurt these are 95 cal per pancake.
    BUT if you use stevia or Splenda and 2 egg whites then they are 74cal per pancake. If you leave the yogurt out and up the water not sure how they taste but less calories:68cal per pancake
