Yellow Cake with Peanut Butter Frosting- Recipe Needed

Hi Everyone,

I'm not a baker, and my husband's 30th birthday is coming up this weekend. I have a few ideas for some substitutions for his birthday cake, but was looking for some more ideas. Especially for the peanut butter frosting... anyone tried to make it healthy?

    Use PB2 or peanut flour! I have peanut flour and if you add a little water to it, you can make it into a peanut butter paste. You could use just that or add some Cool Whip Free and give it some more fluff.

    Edit to add:
    If you buy a box cake mix, just use 1 can of diet light colored/clear soda instead of the eggs and oil.

    2 parts Cool Whip to 1 part low cal PB. Should save some calories.

    Also something else I found:
    Peanut Butter Icing Ingredients:
    -1/4 cup peanut butter
    -1/4 cup reduced fat cream cheese
    -1/4 cup Fat Free Ricotta Cheese
    -1 cup Confectioner’s sugar
    -1/2 tsp vanilla extract
    -2 tbsp Peanuts chopped
    Mix all ingredients until smooth (except peanuts). Spread on cake and then sprinkle with peanuts.
