Pesto Pita Pizza!

This is a Staple in our house. We always switch it up a bit. The main ingredients are a pita picket (but I have also used a tortilla wrap and it was crispy and DELISH) and Pesto Sauce.

I have added artichokes (marinated is awesome!), Light Feta or Light Motzza, Left over Chicken or Turkey (sometimes sandwich meat but thats high sodium), and all kinds of Veggies.

The one I am eating at the moment for Lunch is as follows:




Weight Watchers - 100% Whole Wheat Pita Pocket Bread, 1 pita 100 cal

Classico - Basil Pesto, 2Tbsp 115 cal

Apetina - Feta Crumbled Cheese Light (Canada), 2 tbsp (30g) 70 cal

Chicken Breast - Boneless and Skinless, 3 oz 45 cal

Fresh Produce - Cherry Tomatoes-Raw, 2.5 ounces 18cal


Total: 348 cal 30 fat 19carbs 970 sodium


The best part about this is that it is so full of flavor. It's a great portion for lunch but pair it with a nice salad and you have Dinner.

    Yum Thats sounds soo good. I am definitley a fan of pesto and anything. I may have to give this a try!

    where do you buy pesto from? I can't find it in my grocery store...is it usually in the spag sauce isle?

    Yep! In the pasta aisle. Classico is a pretty generic brand. Whole foods makes their own brand as well.

    You can always make your own with this simple recipe (I don't have measurements off the top of my head):

    Fresh basil
    Shredded Parmesan cheese
    Olive oil
    chopped
    Salt and pepper
    A few drops of lemon juice to keep it from wilting
    Pinenuts (optional)

    Mix in a food processor! DONE!

    You can also freeze it and it'll last like 2 weeks.

    Oops! Sorry I ised only about 1.5oz of chicken. 3 would be way too much for me. didnt notice i put 3 :)

    Oh thanks for that link. help a lot. I was using the one in the database and it is WRONG! Going to use that link for my chicken from now on.
