So I worked from home this morning with a sore throat and unexpectedly got to cook my lunch. There would have been frozen homemade stew in the freezer but I decided to go for...

1 medium sweet potato (200g), unpeeled, ends cut off, pierced a few times with a fork from all sides
1 hard-boiled egg (from the fridge -- make fresh if necessary)
1 large tomato-on-the-vine
1 slice of Swiss cheese (this is Lucerne brand from Safeway)
Place sweet potato in microwave between two sheets of kitchen towel. It's critical to figure out the right power and time settings. Today worked great with 3 min at 30%, [turn the sweet potato] then 3 min at 40% and 1 min at 50%.
Peel the sweet potato immediately, cut it into chunks, place on an oven-proof plate, cover with the cheese and toast in the toaster oven.
Meanwhile slice the tomato and the egg. Once the cheese is melted, take out, add tomato and egg, add freshly grated black pepper.
Enjoy.
The result was maybe a bit low in protein, but it's high in fiber. Values are according to MFP:
Cals: 337, carbs: 43g, fat: 10g, sat. fat: 5g, protein: 16g, fiber: 8g.
