Kabocha/ Buttercup Squash

I can't believe how healthy and delicious Kabocha/ Buttercup Squash is. Between that, Sushi, and milk, I think I could go on forever! How do you feel about the nutrient content?

What are your favourite ways to enjoy these delish, orange-fleshed vegetables? Myself, just microwaving them and eating them skin-on, with a little maple or honey, and cinnamon is the way to go. This can make for a great dessert too.

Another delish recipe is a pureed breakfast smoothie made with milk, squash, sweetener, maybe some cottage cheese for protein, and pumpkin pie spice. Yum.

Feeling adventurous tonight so I'm going to try to make a creamy Kabocha pasta dish, using Shirataki noodles and Kabocha chunks, and a dash of pumpkin pie spice to top off the dish. Getting hungry just thinking about it.

Any other interesting ways to enjoy these types of squash, and are they a regular staple of your diet?

    I have never tried Kabocha, but butternut squash is an everyday item in our household. We eat it baked, mashed, chipped, or even wrapped in tin foil and cooked in the bbq. It makes great soup, quiche and I also add it to bolognaise sauce to make the mince go further and add some nutrition and my kids dont notice.
